Apple Herb Stuffing

Ingredients:

1 loaf Rye Bread

1 loaf Sourdough Bread

6 slices of white sandwich bread

Once fully dried = 18 cups

 

Dried herbs:

Oregano

Parsley

Thyme

Poultry Seasoning

Garlic Powder

Rosemary

 

Fresh herbs:

Parsley

Sage

Rosemary

 

2 eggs

1.5 cups of butter

 

2 medium onions

2 green apples

10 stalks of celery

 

3-4 cups of chicken stock

(Add in one cup at a time, stop once bread feels spongey)

 

Instructions:

 

Slice and rip all bread. By doing both it will give the dressing a nice texture.

Add all dry herbs to bread mixture and toss.

1/2 tbsp of oregano

1/2 tbsp of thyme

1/2 tbsp of Rosemary

1 tbsp of parsley

1 tbsp poultry seasoning

1 tbsp garlic powder

 

For best results let bread and herb mixture dry out together naturally for 4 days, tossing twice a day. If you do not have the time dry out bread mixture in oven on 200 and bake for 1 hour, toss once half way thru.

 

Once the bread mixture is completely dry. Slice up celery, onions and apples and sauté on medium heat in 1 and half cups of butter. Cook until onions become translucent. Once complete turn off the burner and add your fresh parsley, Sage and Rosemary. Give it a toss and set it aside. In the mean time you can use left over butter on wrapper to grease your baking pan.

 

10 stalks of celery

2 medium apples

2 medium yellow onions

1.5 cups of butter

 

Parsley 1 tbsp

Sage 2 tbsp

Rosemary 1 tbsp

 

3-4 cups of chicken stock

2 eggs

 

Add cooked veggie/herb/apple mix to bread. Gradually add in 1 cup of chicken stock at a time. Once you get a spongey texture stop putting in broth. You don’t want soggy stuffing. Now that we have all of that combined crack and whisk 2 eggs and add that to our mixture for a binder. Now transfer to your greased baking dish. Cover with tin foil, transfer to oven and throw it in at 350 degrees and bake for 45 mins. After 45 mins remove tin foil and cook uncovered for the last 15 mins to give it a nice crust. Total cook time of 1 hour.
